Strawberry Spinach Salad with Air Fryer Maple Dijon Tilapia

Serves: 2 Prep: 10 minutes Cook: 15 minutes






Ingredients:

2 tilapia filets (or other white fish)

1 tbsp olive oil

1 tbsp dijon mustard

1 tbsp maple syrup

1/2 tsp balsamic vinegar

Salt and pepper to taste

2 pinches of smoked paprika

Salad:

1/4 cup low FODMAP balsamic dressing

1/4 cup raw pecans or walnuts

2 large handfuls baby spinach

1/2 cup chopped strawberries

1/4 cup crumbled feta cheese

Directions:

  1. Drizzle fish filets with oil. Place in basket of air fryer. Combine dijon mustard, maple syrup, vinegar, salt, andpepper. Spoon dijon mixture evenly over fish.

  2. Cook fish In air-fryer on 380 F for 6-12 minutes (depending on thickness of fish), or until fish can be flaked easily with a fork.

  3. Combine all salad Ingredients and serve on the side.
