Peach Prosciutto Crostini

Peach Prosciutto Crostini


Ingredients

1 crusty french baguette

1 ripe yellow peach (freestone if possible)

3 oz thinly sliced prosciutto

4 oz goat cheese, room temperature

2 oz light cream cheese or neufchatel, room temperature

Small bunch of fresh basil



Instructions

  1. Preheat oven to 450 F.

  2. Slice the baguette into ¼ inch slices. Place slices in even layer on baking sheet. Place in oven and bake for 6 to 9 minutes until toasted. Remove from oven and set aside to cool.

  3. In a medium mixing bowl, add the room temperature goat cheese and cream cheese and whisk by hand or with an electric hand mixer until well-combined.

  4. Thinly slice peach and cut each slice in half.

  5. Thinly chiffonade basil.

  6. Cut each piece of prosciutto in half.

  7. Schmear about 1 tsp of cheese mixture onto each crostini, taking care to leave the edges of the bread neat and tidy.

  8. Top each crostini with a half-slice of peach, a bundle of prosciutto, and a pinch of basil.
