No-Bake Coconut Stone Fruit Bites

Celebrate World Coconut Day with these super easy and delicious energy bites!
1 1/2 cups dried peaches, apricots, cherries, or stone fruit of choice
1 cup raw cashews or blanched almonds
1/4 cup unsweetened shredded coconut (plus extra for topping)
2 tbsp maple syrup, agave, or liquid sweetener of choice
pinch of salt
1/2 cup melted dark chocolate
Add all of the ingredients except the melted chocolate to a food processor and pulse until everything is combined and the mixture has formed a sticky dough.
Roll 1 tbsp amounts of dough into balls and place on parchment-lined baking sheet.
Place baking sheet in freezer while you melt the chocolate. Using a fork, dip each ball in the melted chocolate and return to baking sheet. Sprinkle tops with additional shredded coconut.
Place in fridge for at least 2 hours to set.
