Updated: Mar 30, 2022

For a delicious way to use fresh summer cherries, try this easy recipe! These popsicles are packed with fiber, antioxidants, and probiotics, and are less than 100 calories per popsicle.

Ingredients

  • 20 oz fresh sweet cherries, pitted

  • 2 tbsp honey, agave, or sweetener of choice (optional)

  • juice and zest of one lemon

  • 1/4 tsp almond extract (optional)

  • 2/3 cup water

  • 1 cup yogurt of choice

Directions

  1. Combine pitted cherries with lemon zest, juice, sweetener, water, and almond extract in a medium saucepan. Cook on medium-high heat until sugar has dissolved and cherries have softened slightly.

  2. Blend cherry mixture until smooth.

  3. Fill a popsicle mold halfway with cherry mixture. Top gently with yogurt mixture (you can use plastic cups placed in a 9x13 baking dish if you don't have molds)

  4. Add tops of molds (or popsicle sticks if you are using plastic cups) and freeze overnight.
