Mother's Day Strawberry Muffins Recipe

Make the Mom in your life a special breakfast with these delicious homemade muffins. Fresh warm muffins and a hot cup of coffee will be the perfect way to start the day this Mother's Day!


Servings: 12

Prep: 10 minutes

Cook: 15-17 minutes







Ingredients

2 cups of all purpose flour

3/4 cup granulated sugar

2 1/2 tsp baking powder

1/2 tsp salt

2 eggs

1 cup of 2% milk(or milk of choice)

1/3 cup vegetable oil

1 tsp vanilla extract

1 cup of sliced strawberries


Instructions

1. Preheat the oven to 400 F

2. Add cupcake liners to muffin pan

3. In a mixing bowl add sugar, flour, baking powder and salt and mix together

4. Then add in eggs, milk, oil, and vanilla. Whisk to combine everything

5. Pour in half of the strawberries and stir in. Once combined add in the remaining strawberries

6. Make sure it is mixed well, but be careful not to over whisk it. A few lumps are okay.

7. Fill each cupcake tin 2/3 of the way

8. Bake muffins for 15-17 minutes

9. Take muffins out of oven and allow to cool for 3 minutes
