Gut-Friendly Sheet Pan Nachos!

Looking for a game-food option to try that won't leave you feeling gross and bloated? Try out these Low-FODMAP nachos this football season!


You might be wondering - won't some of these ingredients bother my stomach? I thought I couldn't have any dairy or spices or (fill in the blank). The great news is that the low-FODMAP diet allows all of the ingredients. in these gut-friendly sheet pan nachos in moderation! Of course, always feel free to swap out an ingredient or spice if you know for sure it bothers your stomach. ❤️

Low-FODMAP Sheet Pan Nachos

Ingredients:

  • 1 lb 97% lean ground beef

  • 1/2 cup water

  • 1/2 cup minced green onion tops (discard white parts)

  • 1 tsp minced jalapeno (optional, for added spice)

  • 1 Tbsp chili powder

  • 1/4 tsp cayenne pepper (optional, for added spice)

  • 1 tsp cumin

  • 1 tsp salt

  • 1 bag corn tortilla chips

  • 1 cup shredded cheddar or Monterey jack cheese

Toppings:

  • Diced tomato

  • Sliced green onion (green parts only)

  • Sliced black olives

  • Sliced jalapenos

  • Hot sauce (free from garlic/onion)

  • Lactose-free sour cream or lactose-free plain greek yogurt

  • Finely chopped cilantro


Directions:

  1. Heat skillet on medium heat. Add ground beef and cook until browned and broken into little crumbles.

  2. Add water, green onion tops, jalapeno, spices, and salt. Continue to cook on medium heat while mixing occasionally until the mixture thickens.

  3. Line a sheet pan with aluminum foil or parchment paper. Preheat broiler on your oven and set oven rack to top 2/3 of oven.

  4. Spread chips evenly on sheet pan, then top with meat and shredded cheese.

  5. Broil until cheese is melted and bubbly. Top with toppings of choice and serve!
