5-Minute Vegetarian Rice Bowl

An easy and completely microwavable meal. This is the ideal go to meal to make when you don't have a lot of time, but still want to eat healthy!

prep: 5 minutes

servings: 2


1 package microwavable broccoli florets

1/2 cup grape tomatoes

1 pack white basmati rice (microwavable)

2 oz feta cheese

1 can low sodium great northern beans (sub with tofu or walnuts for low FODMAP protein)

Salt & Pepper to taste

1-2 tbsp Tzatziki sauce


  1. Cook rice and broccoli florets in microwave according to their package instructions.

  2. Pour beans in a microwave safe bowl and heat up in microwave for 1-2 mins or serve cold.

  3. Divide rice, broccoli, tomatoes, feta, and beans between 2 bowls. Season with salt & pepper to taste.

  4. Add 1-2 TBSP of sauce on top of your rice bowl and enjoy!
